If you’ve been following my blog for a while now, you know that I love to make baked goods in the summer that have fruit in them. Well I love using fruit in general, but in the summer especially, it seems more appropriate to be eating something that tastes more refreshing and has real fruit like berries or citrus, as opposed to chocolate on chocolate on chocolate. I still do plenty of that, but I really love using fruit.
Happy April 1st/April Fool’s Day! No tricks in this post, only yummy treats. These pecan pie bars are my favorite thing that I’ve made in a while. They literally just taste like a bunch of candied pecans stuck together on a buttery crust. Could you ask for anything more? They are delicious. They really do taste like pecan pie, too! The crust is more like a cookie than a pie crust, but I really like it. The browned butter really adds some flavor.
Reese’s cups are potentially my all-time favorite candy. If you follow my blog, you know that I love the combination of chocolate and peanut butter. Well, these Reese’s bars have practically only chocolate and peanut butter in them, so what’s not to love? The bottom layer is peanut butter, butter, confectioners’ sugar, and graham crackers. The top layer is melted chocolate with a touch of peanut butter.
This was pretty much my excuse for making chocolate chip cookies again, but still be able to put a new recipe on my blog. It was a great excuse though, because these are amazing. I’d say it’s like eating a larger, chewier, and denser chocolate chip cookie. Denser may not sound like a great adjective to use for food, but that’s the best one I can think of to describe these, and believe me they’re delicious.
I’m always surprised by the large number of people I meet who love lemon bars. I like them, but I don’t love them. I’ve never been such a huge fan of lemon, but lemon bars have a lot of sugar to offset that so they turn out pretty good. If you do love lemon bars, this is definitely the recipe for you.
These were oh so good. They were actually intended on being stuffed with caramel, but most of my caramel sunk to the bottom. However, this ended up not being very tragic at all because it gave it a chewy, sugary layer on the bottom that paired really well with the chocolate chip cookie dough. I never would have thought of putting caramel and chocolate chip cookies together, but Pinterest thought of it for me and I’m glad they did.
More fruit, I know. I love using fruit in desserts. Don’t get me wrong, I love chocolate chip cookies, but they’re sugary and sweet, not refreshing at all for summer. When you use fruit in dessert, they’re both refreshing and sweet, but also not over sugary, and so they’re perfect!
I got these from one of my all-time favorite cookbooks I have called “The Cookie Dough Lover’s Cookbook”. I love it, because I am a cookie dough lover, therefore it’s like it’s made for me. I’ve made cookie dough truffles from it before a couple of times, and I’ve made some other things. One of my dream cakes to make is in it, and it’s a brown sugar layer cake with cookie dough in the middle and a cookie dough frosting, then decorated with mini chocolate chip cookies. Ugh, one day I am so making that.
Nothing screams summer to me like fresh fruit. I love to make pies and tarts in the summer, and I have a newfound love for galettes as well. These strawberries and cream bars are kind of like mini tarts, but with shortbread instead of tart dough. They’re delicious! It’s like eating a little strawberry shortcake, except the cake is a buttery shortbread cookie instead! Plus they’re very quick and really easy.
I was looking back through my posts and I realized that I say “this is possibly my all-time favorite recipe” way too often. It’s unfair to the recipes that really are my all-time favorite. Unfortunately for me, that’s literally every recipe I post to my blog. Because if I didn’t absolutely love it, I’d change it until I did. So, from now on, I am going to try to not use that phrase, or else I’ll just use it for everything.
Now that I’ve cleared that up, these blondies are the bomb. They are another use of Biscoff cookie butter, which if you’ve never tried, you should. I mean it’s as simple as this: it’s a cookie pulverized for so long that it eventually makes a spread. So you can actually spread cookie onto your toast in the morning. Genius!
