Peanut Butter Brownies with Ganache Drizzle

These brownies were crazyyyyy good. I probably say that about most of the recipes on this site, since I only post recipes I think are the best of the best, so let me explain to you what makes these so good. First, you have the brownie, which is rich in chocolate and oh so fudgy. Then, it’s topped with a creamy peanut butter topping that’s a lot like a frosting. Then, you drizzle the bars with homemade chocolate ganache and finally top them off with chopped peanuts. All that chocolate and peanut butter together make one of the best and most decadent brownies I’ve ever tasted.

I really love the peanuts on top because the brownie is very soft and the frosting is super smooth, so the peanuts add a nice touch of crunch on top. Honestly, one of my favorite parts about this brownie (next to the taste, of course) was the look of it. I thought they were so beautiful. Well I still think they are, as a matter of fact. I had a lot of fun photographing them because it was so easy to make them look this delicious.

Although unrelated to these brownies, I have exciting news. This weekend I am going scuba diving and will officially become SCUBA certified. I am so excited. I’ve been going to classroom sessions and pool sessions galore. I had to do 2 classroom sessions, 3 hours each, and 7 pool sessions, 2 hours each. Quick math brings that to 20 hours, which has taken up a lot of my summer! So, needless to say, I’m excited to get certified, and to go on my first official dive!

As always, happy baking everyone!

Peanut Butter Brownies with Ganache Drizzle

Fudgy chocolate brownies with a creamy peanut butter frosting layer on top, sprinkled with salted peanuts and drizzled with a chocolate ganache.

  • 1 cup butter
  • 10 oz bittersweet chocolate, chopped
  • 1 cup sugar
  • ¾ cup brown sugar
  • 3 eggs
  • 1 cup flour
  • 1/3 cup cocoa powder
  • ½ tsp kosher salt
    Peanut Butter Layer:
  • 1 cup smooth peanut butter
  • ¾ cup butter, softened
  • 2 cups confectioners' sugar
  • 1 tsp vanilla extract
  • ¼ tsp kosher salt
    Chocolate Ganache:
  • 4 oz semi-sweet chocolate, chopped
  • 1/3 cup heavy cream
  • ½ cup chopped salted peanuts, for garnish

    Make the brownies:
  1. Preheat oven to 350ºF. Coat a 13x9-inch baking dish with non-stick cooking spray.
  2. In a heatproof bowl, combine butter and chocolate and melt in the microwave.
  3. In a large bowl, whisk sugar, brown sugar and eggs. Whisk in melted chocolate mixture. Stir in flour, cocoa powder and salt, mixing just until flour disappears.
  4. Pour batter into prepared pan. Bake 28-30 minutes. Remove from oven and let cool completely before adding peanut butter layer.
    Make the peanut butter layer:
  1. Using an electric or stand mixer, cream peanut butter and butter on medium speed until light and fluffy. On low speed, add confectioners' sugar, vanilla and salt.
  2. Increase speed to medium, mixing until creamy. Spoon over cooled brownies, creating an even and smooth layer on top. Sprinkle with peanuts and refrigerate while making chocolate ganache.
  1. For the ganache, place chocolate in a medium bowl. Heat the cream in a small saucepan until bubbles form around the edge.
  2. Gradually whisk warmed cream into chopped chocolate, continuing to mix until ganache is smooth. Drizzle over peanut butter layer. Refrigerate for one hour before cutting into bars.
